A-plus potatoes may lead to more nutritious cassava.

To increase beta-carotene levels in potatoes, Van Eck inserted a specially designed segment of DNA into the potato genome to silence the gene that codes for the beta-carotene-converting enzyme. Biofortified cassava may reduce the number of children suffering from vitamin A deficiency, especially in countries in Africa and South Asia.
